Fresh local ingredients play a very special role in Latifa’s cooking such as tomatoes, zucchini, eggplant, vegetables, herbs, mushrooms, garlic and olive oil. Not surprising as they come from the region, just like the fish and lamb. However, no ingredient is as strongly linked to Provence as the olive. Whether green or black, these tasty little stone fruits appear everywhere in the local cuisine.
